A sophisticated sensory expression of spontaneous fermentation, the Terroir Blend 2019 reflects the masterful blending of one, two, and three-year-old spontaneously fermented wheat beer. The sensory profile is defined by a deep, multifaceted funk—reminiscent of leather, wet hay, and earthy barnyard—harmonized by a bright, puckering lactic acidity. Subtle wheat notes provide a supportive bready backbone, while the extended aging introduces delicate oak and green apple nuances. The high effervescence and bone-dry finish accentuate the complexity of the wild microflora, resulting in a refined, sparkling Gueuze that showcases a harmonious balance between tartness and funky depth.
Appearance. Deep golden (6 SRM) with brilliant clarity. Features a thick, rocky, mousse-like white head with exceptional retention and intricate lacing. Highly effervescent.
Aroma. High intensity with complex, balanced funkiness including notes of horse blanket, leather, and sun-dried hay. Light citrus rind and rhubarb fruitiness. Malt is supportive and wheat-like. No hop aroma. Very light oak-derived vanilla and honey are present.
Taste. Initial impression is sharply sour but balanced by a deep, funky complexity. Descriptors follow the aroma with prominent barnyard and earthy notes. Low grainy wheat flavor. Bitterness is nearly absent, with acidity providing the balance. No hop flavor. Finishes bone dry and crisp with a long, tart, and funky aftertaste.
Mouthfeel. Medium-light body with a soft, velvety texture. High carbonation leads to a prickly effervescence. Significant puckering quality from the acidity without harsh astringency. A subtle, well-integrated alcohol warmth is present.
