Paradox is a masterful Double IPA that balances old-school intensity with modern hop innovation. The sensory profile is led by a pronounced forest and pine scent from classic American hops, intricately layered with the intense, vinous, and gooseberry-like hints of Nelson Sauvin SubZero® Hop Kief. On the palate, a high yet fleeting resinous bitterness provides a robust structure characteristic of the classic West Coast style. Despite its 8% ABV, the beer maintains a clean, dry finish with a neutral malt backbone that allows the complex hop oils to shine. It is a bold, hop-forward experience with a crisp, lingering resinous aftertaste.
Appearance.Color is deep gold to light copper (approx. 9 SRM). Excellent clarity with a brilliant luster and a moderate-sized, persistent, off-white head that leaves significant lacing.
Aroma.High intensity hop aroma featuring classic American hops notes of pungent pine, resin, and forest floor, alongside the distinct vinous, crushed grape, and gooseberry character of Nelson Sauvin. Low, neutral, grainy maltiness supports the hops. Fermentation is clean with very low esters.
Taste.Initial impression is a burst of resinous pine and tropical white wine hop flavors. Malt flavor is low and unobtrusive, providing a clean, slightly grainy foundation. Bitterness is high and assertive but lacks harshness, finishing very dry. The alcohol is well-integrated, providing a smooth backdrop to the lingering, hoppy, and bitter finish.
Mouthfeel.Medium body with a smooth, slightly oily texture from hop resins. Carbonation is medium-high. A noticeable but restrained and smooth alcohol warmth is present, without any harsh hop-derived astringency.
