COVEN BREWERY Before I Forget
Before I Forget is a punchy Double IPA that leans heavily into its modern hop profile. Mosaic drives the sensory experience with pungent notes of blueberry and tropical fruit, while Amarillo introduces bright layers of orange zest and floral spice. The inclusion of Idaho-7 rounds out the profile with a distinct resinous pine and stone fruit depth. Despite its 8% strength, the beer maintains a lean, neutral malt backbone that allows the hops to shine without interference. A firm, clean bitterness leads into a dry, lingering finish, ensuring that the intense hop character remains the focus from the first aromatic whiff to the final crisp sip.
Appearance. Deep gold to light orange (7-9 SRM). Pours with a moderate-sized, persistent, off-white head that leaves consistent lacing. Slight haze is present, though generally clear.
Aroma. Intense hop aroma dominated by tropical mango and blueberry from Mosaic, alongside Amarillo’s grapefruit and floral notes. Idaho-7 provides a background of pine and apricot. Malt is neutral and grainy-sweet, while fermentation remains clean with very light pear-like esters and a soft, smooth alcohol presence.
Taste. The initial impression is a burst of hop-derived citrus, melon, and resin. Hop flavors mirror the aroma with prominent Mosaic berry and Idaho-7 earthiness. Bitterness is high but refined (approx. 75 IBU), supported by a low, soft, crackery malt character. It finishes very dry with a lingering piney and pithy hop aftertaste.
Mouthfeel. Medium body with a smooth, velvety texture. Carbonation is medium-high, providing a lively prickle. A subtle, well-integrated alcohol warmth is noticeable but lacks any solvent-like harshness. No astringency.
