Cotoya Rye IPA presents a compelling tension between rustic grains and modern hopping. The foundation of barley and rye malts creates a complex, bready base characterized by the distinctive peppery spice of the rye. A generous load of hops provides a sharp, clean bitterness and aromatic layers of resinous pine and citrus that cut through the grain’s earthy depth. This Alternative Grain Beer leans into the textured, slightly oily mouthfeel typical of rye harvests, finishing dry with a lingering resinous quality. It is a bold, narrative-driven ale that balances harvest-time earthiness with an assertive American-style hop profile.
Appearance. Deep gold to copper-colored (10–14 SRM) with a slight, persistent haze characteristic of high-protein rye grains. Supports a thick, creamy, off-white head with excellent retention and significant lacing.
Aroma. High intensity hop aroma featuring notes of citrus zest and pine needles. The malt character is prominently grainy and spicy, reminiscent of pumpernickel bread and black pepper, with a clean fermentation profile and very low fruity esters.
Taste. Initial impression is a sharp, spicy bite of rye followed by a firm, clean bitterness. The malt flavors are complex, offering toasted bread and nutty barley notes. Hop flavors are moderate-high, leaning toward grapefruit and resin. The finish is decidedly dry and crisp, with a lingering spicy-bitter aftertaste that remains clean.
