This vibrant Wild Specialty Beer highlights a global collaboration between CoolHead and Pastore. Utilizing the signature Nordic Sour method and fermented with Voss KVEIK, the beer presents a bright, citrus-forward profile. The addition of Flor de Jamaica provides a striking pinkish-red hue and a cranberry-like floral tartness, while the Yuzu offers an intense, aromatic citrus punch. Dragon Fruit adds a delicate tropical nuance and a hint of earthy sweetness to the mid-palate. The Voss KVEIK fermentation contributes clean orange-peel esters that knit the exotic fruits together, resulting in a lean, quenchable, and remarkably refreshing sour ale.

Appearance. Vivid pink to light reddish-magenta hue from the Flor de Jamaica; slight haze from fruit solids and protein. The head is pale pink, frothy, but exhibits relatively low retention due to the acidic environment.

Aroma. High aromatic intensity featuring sharp, zesty Yuzu and the herbal, berry-like perfume of Flor de Jamaica. Subtle tropical Dragon Fruit notes sit in the background alongside clean orange esters from the Voss KVEIK. Malt and hop aromas are absent, allowing the clean lactic tartness to lead.

Taste. A brisk, puckering initial impression of lactic acidity. The Yuzu dominates the palate with its unique, tart citrus flavor, followed by the floral tang of hibiscus. Dragon Fruit provides a very light, melon-like sweetness that softens the edges. Fermentation is clean with zero hop bitterness; the acidity provides the balance. The finish is bone dry and very clean.

Mouthfeel. Light body with a crisp, effervescent carbonation that creates a prickly sensation on the tongue. No alcohol warmth is present. A very mild tannin-like astringency from the hibiscus petals adds to the dry sensation.
