This Wild Specialty Beer offers a festive, sensory-rich experience inspired by Nordic holiday traditions. It pours with a deep ruby-purple hue, immediately releasing high-intensity aromas of tart cherries and jammy black currants. The classic Glögi spice blend is front and center, featuring warm, woody cinnamon, herbal cardamom, and a hint of pungent clove. On the palate, a sharp lactic acidity provides a bright backbone for the dense fruit flavors, while the spices add complexity and a drying, aromatic finish. The fermentation character is clean but assertive, allowing the specific berry and spice profiles to shine without competing malt or hop interference.
Appearance. Deep ruby to dark purple (25-35 SRM) with a vibrant pink-tinted head. Retention is moderate to low; the beer displays a noticeable haze from the heavy addition of fruit purée.
Aroma. High intensity aromatics of dark berries, specifically tart cherry and earthy black currant. A complex bouquet of Glögi spices follows, with prominent cinnamon and spicy cardamom, supported by a subtle phenolic clove note. Malt and hop aromas are absent.
Taste. Initial impression is sharply acidic and fruity. Dominant flavors of black currant and sour cherry provide a tart sweetness that is quickly balanced by the warmth of cinnamon and the herbal depth of cardamom. Clove remains a supporting note in the background. Bitterness is very low (near zero IBU), and the finish is bone-dry, crisp, and lingering with spice and berry skin tannins.
Mouthfeel. Medium-light body with high, effervescent carbonation that enhances the perception of acidity. Alcohol warmth is very low. A slight astringency from the black currant skins and spices adds structure to the mouthfeel.
