Subtle peppery phenols and dark fruit esters of plum and raisin provide a classic Belgian yeast backbone. The palate is defined by complex layers of toasty malt and unrefined sugar, balanced by a restrained bitterness that ensures a surprisingly dry finish. The 8% alcohol provides a gentle, well-integrated warmth, supporting a medium-full body that carries lingering notes of spice and dark syrup.
Appearance. Dark brown with reddish-copper highlights (15–20 SRM); generally clear. Large, dense, and long-lasting creamy off-white head with good lacing.
Aroma. Moderate to high intensity. Rich malt character of toast and dark caramel blended with piloncillo-driven molasses and hints of cocoa. Distinctive fruity esters of raisin and plum are accompanied by low peppery phenols. Hop aroma is absent.
Taste. Rich malt and dark sugar flavors dominate the initial impression, featuring toasted bread and molasses. Complexity is added by yeast-derived dried fruit and light spicy phenols. Bitterness is medium-low, keeping the balance malty-rich but allowing for a moderately dry finish. Aftertaste features lingering dark syrup and toast.
