This potent Super Saison showcases a complex interplay between traditional Belgian malts and bold, modern hop profiles. The aroma is dominated by the herbal, citrus-forward lift of lemon thyme, which bridges the gap between the spicy, peppery esters of the Saison yeast and the earthy, dank character of Columbus hops. Polaris hops contribute a nuanced, cooling mint-like undertone that freshens the palate. Despite its high alcohol content, the beer remains true to the style’s tradition of high attenuation, finishing remarkably dry and effervescent. The result is a sophisticated, warming farmhouse ale where rustic grain notes support a vibrant, botanical-driven sensory experience.
Appearance. Deep gold to light amber with a slight haze from being unfiltered. Produces a dense, long-lasting, rocky ivory head that leaves persistent Belgian lace on the glass.
Aroma. High aromatic intensity featuring a blend of spicy black pepper phenols and citrusy esters. Distinctive herbal lemon thyme and citrus notes are prominent, supported by earthy Columbus and slightly minty Polaris hop character. A light, grainy malt sweetness and a soft alcohol warmth are present in the background.
Taste. Complex balance of fruity-spicy yeast and firm hop bitterness. Initial flavors of citrus and stone fruit transition into a mid-palate of peppery spice and herbal lemon thyme. The Columbus hops provide a resinous, earthy counterpoint. Finishes very dry and crisp with a lingering bitter, spicy aftertaste and a pleasant alcohol presence.
Mouthfeel. Medium-bodied with very high carbonation, creating a prickly, effervescent sensation. Noticeable but well-integrated alcohol warmth given the high gravity. Lacks any heavy or syrupy residue.
