This sophisticated Fruit Lambic-style blend showcases the intricate marriage of a 2018 spontaneous fermentation base with "Rosa Rosae" natural wine. The sensory profile is defined by a vibrant, vinous acidity and a deep, multi-layered funk characteristic of well-aged wild ales. Aromatics of wild strawberries, dried rose petals, and earthy barnyard notes lead into a bone-dry palate. The wine integration adds a delicate tannic structure and red fruit brightness that complements the sharp lactic tartness. It is an elegant, refreshing expression of terroir, balancing the rustic edges of Brettanomyces with the floral grace of Italian viticulture in a harmonious, complex finish.
Appearance.Pours a hazy, pale ruby to copper-pink color (SRM 8-10). It features a thin, pink-tinted white head with moderate retention and light lacing, typical of acidic, aged wild ales.
Aroma.High intensity with a complex bouquet of barnyard funk, wet hay, and leather. The wine influence is prominent, offering notes of fermented red grapes, dried hibiscus, and subtle oak. Low crackery malt and negligible hop aroma.
Taste.Initial impression is sharply tart and refreshing. The palate follows the aroma with deep lactic acidity, earthy Brettanomyces funk, and a pronounced vinous character from the natural wine. Notes of red currant and tart cherry emerge against a very low bready malt backdrop. No perceptible hop bitterness. The finish is bone-dry and lingering with a touch of grape skin tannin.
Mouthfeel.Medium-light body with a crisp, puckering quality. Carbonation is moderate to high, providing a prickly sensation that cleanses the palate. Very light alcohol warmth and a subtle tannic astringency from the wine blend.
