Colima Oyamel is a decadent English Barley Wine that captures the essence of a winter refuge. The sensory journey begins with a foundation of Maris Otter, Melanoidin, and Chocolate malts, creating a deep, complex base of toffee and toasted bread. Aging for five months in Kentucky bourbon barrels imparts luxurious notes of vanilla and toasted coconut, seamlessly blending with the yeast-driven character of banana bread. While Bravo and East Kent Goldings hops provide a subtle earthy and floral counterpoint, the focus remains on the rich, multi-layered malt sweetness. This 11% ABV ale offers a sophisticated, warming experience, perfect for slow sipping and festive gatherings.
Appearance. Deep mahogany to dark brown with ruby highlights (SRM 18-22). Displays a low, creamy, off-white head with limited retention. Excellent clarity is present, with visible viscosity and legs clinging to the glass upon swirling.
Aroma. High intensity and complex. Dominant aromas of rich toffee, caramel, and toasted bread from the malts are complemented by bourbon-derived vanilla and toasted coconut. Estery notes of banana bread and dried plum are evident, alongside a faint earthy, floral hop character. The alcohol presence is soft, rounded, and aromatic rather than sharp.
Taste. A lush, multi-layered palate of malt sweetness featuring biscuit, deep caramel, and a touch of cocoa. The mid-palate introduces barrel-aged flavors of vanilla bean and coconut, integrated with esters reminiscent of banana bread. Hop bitterness is moderate, providing enough structure to balance the heavy malt without being assertive. The finish is long and warming, with a lingering sweetness and a hint of oaky tannin.
Mouthfeel. Full-bodied and chewy with a velvety, luscious texture. Carbonation is low to moderate, enhancing the beer's weight. A significant but smooth alcohol warmth is present, coating the throat without any harshness or burn.
