This Double IPA is a bold, 8% ABV expression of Estonian-Bulgarian collaboration, transforming the style into a refreshing sensory landscape. The foundation of neutral base malt provides a clean, supportive canvas for intense hop characteristics, which are uniquely elevated by the addition of zingy quince and cooling mint. Aromatic layers of tropical fruit and pine intertwine with the tart, pome-fruit essence of quince and a subtle herbal breeze. On the palate, a firm bitterness meets a bright, fruity acidity, leading into a crisp, dry finish where the mint leaves a lingering, refreshing chill that enhances the beer’s high drinkability.
Appearance. Deep gold to light orange-copper with good clarity; features a moderate-sized, persistent, off-white head with fine lacing.
Aroma. High intensity featuring citrus and resinous hops, layered with the sharp, floral tartness of quince and a distinct, cooling herbal mint note. A clean, grainy malt character remains in the background with a neutral fermentation profile.
Taste. Initial hop-driven citrus and stone fruit flavors are quickly joined by the zingy fruitiness of quince. High bitterness is firm but smooth, balancing a low, unobtrusive malt character. The finish is dry with a lingering hoppy bitterness and a refreshing, cool mint aftertaste.
Mouthfeel. Medium body with a smooth texture and medium-high carbonation. Displays a restrained, smooth alcohol warmth without any harsh hop-derived astringency.
