This imposing Imperial Stout presents a masterful fusion of Balkan tradition and bold brewing, characterized by its massive 12% ABV and unique infusion of North Macedonian pear rakija. The sensory journey begins with an intense marriage of bittersweet chocolate and espresso-like roasted malts, softened by the creamy sweetness of a Milk Stout base. The addition of oak chips provides a structured vanilla and wood backbone that supports the vibrant, floral, and ripe orchard fruit character of the pear brandy. A deep, warming finish lingers with notes of dark fruit, charred grain, and a refined spirituous elegance that honors its regional roots.
Appearance. Jet black and completely opaque (SRM 40+). Pours with a thick, dense, deep tan head that shows moderate retention, leaving a viscous film on the glass and prominent legs when swirled due to the high alcohol content.
Aroma. Intense and complex; primary notes of dark chocolate, cocoa, and heavy roast are balanced by a distinct, fruity ester profile of ripe pear and floral brandy. Subtle vanilla and toasted wood from the oak chips emerge as the beer warms, supported by a rich, lactose-driven sweetness and a noticeable but clean alcohol presence.
Taste. Bold initial impression of sweetened espresso and dark-toasted grains. The mid-palate is dominated by the unique North Macedonian pear rakija, offering a fruity brightness that cuts through the heavy malt. Hop bitterness is moderate to high but perceived as firm rather than aggressive, balanced by the residual sugars of the milk stout style.
