This Imperial Stout is a decadent, high-gravity masterpiece that captures the spirit of the Balkans through a luxurious blend of roast and spirit. The infusion of Greek Tsipouro introduces a sophisticated vinous character, reminiscent of grape-skin and herbal brandy, which mingles with the intense aromas of espresso and bittersweet chocolate. Oak chips contribute a structural woodiness and subtle vanilla notes that soften the 12% ABV. On the palate, the creamy milk stout base provides a velvety backdrop for flavors of black licorice, dried plums, and toasted grain. It concludes with a long, warming finish that balances residual sweetness with a firm, roasty bitterness.
Appearance. Color is jet black and opaque. It features a dense, deep tan head with moderate retention and visible legs reflecting its high viscosity and alcohol content.
Aroma. High intensity. A rich blend of roasted malt smelling of dark chocolate and coffee, combined with moderately strong esters of raisins and figs. The Tsipouro adds a vinous, spicy brandy note, while oak chips provide a background of vanilla and toasted wood.
Taste. A complex, intense mix of bittersweet chocolate, burnt grain, and black licorice. The Tsipouro infusion adds a layer of spicy fruitiness, supported by the dark fruit esters. It has a medium-high bitterness that is well-balanced by the creamy lactose sweetness. The finish is lingering, warm, and bittersweet.
Mouthfeel. Full to very full-bodied with a chewy, velvety, and luscious texture. Carbonation is low to moderate, and there is a smooth, noticeable alcohol warmth that remains well-integrated.
