This Wee Heavy pours as a robust tribute to winter, emphasizing a deep, malt-forward profile. Expect an initial wave of rich caramel and toffee sweetness, elevated by complex specialty malts that offer notes of toasted breadcrumbs and graham crackers. The extended maturation in French oak barrels—previously housing Syrah—introduces sophisticated layers of vanilla and dark fruit, alongside a subtle vinous character and a whisper of acidity. At 8% ABV, the alcohol is well-integrated, providing a comforting warmth that balances the chewy, full-bodied texture. It is a decadent, evocative ale designed for slow sipping during the coldest months.

Appearance. Deep mahogany with brilliant ruby highlights (SRM 22). It supports a dense, creamy tan head with moderate retention and noticeable legs upon swirling due to the elevated alcohol content.

Aroma. High intensity of rich caramel, toffee, and toasted malt. Secondary layers of dried plums and raisins merge with French oak accents of vanilla and a refined vinous note from the Syrah barrels. Clean fermentation with noticeable but smooth alcohol warmth.

Taste. Initial impression is deeply malty and sweet, featuring thick caramel, butterscotch, and nougat flavors. Mid-palate reveals complex toasted bread and a hint of roasted grain. The French oak contributes a dry vanilla finish and a delicate grape-like acidity that provides balance. Bitterness is low, allowing the malt and wood to lead into a long, warming, slightly vinous finish.

Mouthfeel. Full-bodied with a luxurious, chewy, and slightly creamy viscosity. Carbonation is moderate. A significant, well-integrated alcohol warmth is present without being harsh. A very light tannic presence from the wood adds structure.
