This robust Wild Specialty Beer presents a deep, jewel-toned profile driven by the inclusion of aronia berries. The sensory journey begins with a sharp, clean lactic acidity from Lactobacillus, which is immediately softened by a complex layer of winter spices. The aronia provides a distinctive dark fruit character, contributing both a puckering tartness and a refined, tea-like tannic astringency. Despite its refreshing sour edge, the 8% ABV lends a subtle, hidden warmth that suits long winter nights. Earthy berry notes mingle with spicy undertones, finishing dry and evocative of a sophisticated, fruit-forward spiced ale with a complex, winter-inspired soul.
Appearance. Deep ruby to dark garnet with a distinct purple hue; pours with a moderate, pink-tinted head that has fair retention. Slight haze is present from the aronia addition.
Aroma. High intensity aromatics of tart red berries and earthy chokeberry. A clear, clean lactic sourness provides a sharp backdrop, complemented by fragrant winter spices like cinnamon and clove. Malt is minimal, while hop character is absent.
