Cobolis Jefferson is a vibrant Hazy IPA that celebrates a sensory declaration of independence through a complex, global hop blend. Built on a foundation of Low Colour Maris Otter, oats, and wheat, it offers a soft, pillowy canvas for a diverse aromatic profile. The specific use of Sabro hops provides distinctive, unconventional notes of coconut, cedar resin, and fresh mint, while Citra and Cascade contribute layers of mandarin, grapefruit, and tropical fruit. Fermented with Verdant IPA yeast, the beer exhibits stone fruit esters that heighten the juicy character, finishing with a smooth, restrained bitterness and a subtle, well-integrated warmth.

Appearance. Straw to deep gold with a significant, opaque haze and a luminous shine. It is topped by a dense, rocky, meringue-like white head with high retention and thick lacing.

Aroma. High intensity aroma featuring tropical pineapple, toasted coconut, and bright mandarin citrus. Background notes of cedar and a hint of mint accompany bready, light grain scents from the malt. Fermentation esters are prominent, suggesting ripe apricot and peach.

Taste. Initial impression is a burst of tropical fruit and creamy coconut. Prominent flavors of mandarin orange and citrus zest lead the profile. The malt provides a soft, bready backbone without caramel or toast. Bitterness is moderate but feels soft and restrained. The finish is off-dry and smooth, featuring a lingering, juicy fruit aftertaste.
