This refreshing Berliner Weisse is a vibrant celebration of citrus, featuring a complex blend of four varieties led by Japanese kabosu and Shiranui orange. The aroma is a bright explosion of floral citrus oils and tangy passionfruit, layered over a delicate base of raw bread dough and sourdough wheat. On the palate, a clean, sharp lactic acidity provides a bracing backbone for the medley of tropical and zesty fruit notes. The kabosu offers a unique, lime-like floral depth, while the Shiranui orange adds a whisper of citrus sweetness that quickly yields to a bone-dry, effervescent, and highly refreshing finish.

Appearance. Straw in color (2–3 SRM) with a slight haze typical of wheat and fruit additions. It features a large, dense white head with poor retention and a highly effervescent character.

Aroma. Moderately high intensity of sharp, clean lactic sourness. The profile is dominated by exotic citrus, specifically floral kabosu and bright Shiranui orange, alongside tropical passionfruit notes. A background of raw bread dough and sourdough wheat malt provides structure. No hop aroma is present.

Taste. Initial impression is a sharp, clean lactic sourness that dominates the palate. Layered citrus flavors of kabosu and Shiranui orange are prominent, supported by tangy passionfruit. A grainy, doughy wheat malt flavor is noticeable in the mid-palate. Hop bitterness is undetectable, and there is no hop flavor. The finish is very dry and crisp with a lingering tartness.

Mouthfeel. Light body but not thin. Very high, spritzy carbonation. No perceived alcohol warmth. Crisp, sharp acidity provides a refreshing, mouth-watering sensation without astringency.
