This Double IPA collaboration captures the essence of modern hopping techniques through a bold, 9% ABV framework. A foundation of Pilsner malt and raw wheat provides a delicate, doughy base that allows the hop profile to shine without excessive sweetness. Primary notes of Mosaic create a lush canvas for Galaxy and Citra to express intense aromas of overripe mango, pineapple, and passion fruit. The palate is defined by oily hop resin, delivering complex layers of white wine, pine, and grapefruit zest. Finishing dry with a clean bitterness from Columbus, the beer balances its significant strength with a soft, pillowy texture.
Appearance. Deep gold to light orange-copper with a slight, persistent haze from the raw wheat. Crowned by a moderate, creamy white head with significant lacing.
Aroma. High intensity aromatics dominated by overripe mango, pineapple, and tropical passion fruit. Secondary notes of white wine and pine resin are supported by a clean, grainy, doughy malt character and a neutral fermentation profile.
Taste. Bold tropical fruit flavors take the lead, featuring mango and pineapple layered with grapefruit zest and subtle white wine. The Mosaic hops provide a complex berry and pine resin quality. Bitterness is firm but smooth and not harsh, balanced by a light, bready malt presence before a dry, lingering hoppy finish.
Mouthfeel. Medium body with a characteristic soft, doughy texture from the wheat and a slick, oily hop resin coating. Carbonation is moderate. A gentle, well-integrated alcohol warmth is present without being solventy.
