A modern, sustainable take on a traditional Saison, this collaboration with Jester King employs cold fermentation to create a cleaner, crisper profile than typical farmhouse ales. The use of second use hops provides a refined and delicate hop character, leaning into subtle floral and earthy notes rather than aggressive bitterness. Aromas of lemon zest and cracked white pepper lead into a soft, grainy malt palate. The beer is highly attenuated and effervescent, delivering a bone-dry finish. This approach marries the rustic complexity of a farmhouse ale with the refreshing, bright snap of a cold-fermented lager technique.
Appearance. Pale gold with a slight haze; features a dense, rocky white head with excellent retention and significant Belgian lace.
Aroma. Moderate intensity with a mix of pome fruit esters, lemon zest, and a distinct peppery spiciness. Low floral and earthy hop character from the second use hops, backed by a light, grainy malt scent.
Taste. Initial impression is crisp and very dry. Soft, grainy malt flavor is quickly followed by medium-low spicy phenols and citrus esters. Hop flavor is subtle, offering herbal and floral nuances. Moderate bitterness is accentuated by the high attenuation, leading to a clean, spicy, and bone-dry finish.
Mouthfeel. Medium-light body with high, effervescent carbonation. Features a crisp, refreshing mouthfeel with no perceptible alcohol warmth and a clean, non-astringent finish.
