Rewilding is a vibrant, low-ABV Straight Sour Beer designed for refreshment, channeling the essence of Antipodean white wines. A bright, spritzy character leads with the distinct sensory profile of Nelson hops, offering sophisticated notes of crushed green grapes and tropical passionfruit. Complementing this is the zesty influence of Motueka hops, providing a delicate lime finish that brightens the palate. The base is light and crackery, supporting a clean, lemony lactic acidity. At just 3% ABV, it presents as a crisp, all-day sipper with an effervescent quality and a bone-dry finish, perfect for an extended Indian summer.

Appearance. Pale straw (2–3 SRM). Brilliant clarity to a slight haze. Large, dense white head with moderate to poor retention and high effervescence.

Aroma. High intensity; dominant sharp lactic sourness with notes of lemon and tart apple. Notable hop-derived aromatics of gooseberry and white grape from Nelson hops, alongside a hint of lime zest from Motueka. Low, crackery malt background with clean fermentation and no funk.

Taste. Strong, clean lactic sourness dominates. Subtle, bready and grainy malt provides a lean backbone. Pronounced fruit character featuring tart lemon, green grape, and tropical fruit from Nelson hops, finishing with a delicate lime citrus note from Motueka. Bitterness is undetectable (3–8 IBU context). The balance is sharply acidic and crisp, leading to a bone-dry, refreshing finish.

Mouthfeel. Light body. High carbonation providing a prickly, spritzy sensation. Zero alcohol warmth. Crisp acidity with no astringency.
