Not Knowingly Not-Knowing is a vibrant Brett Beer that balances an impactful, fruit-forward cherry tartness with the multifaceted spice of tonka bean. The sensory profile leads with rich, ripe cherry notes, underpinned by the earthy mellowness of tonka, which introduces nuances of vanilla, almond, and subtle wood. Fermentation with Brettanomyces provides a crisp, dry foundation and a light, non-lactic acidity that lifts the stone fruit character. The result is a complex, medium-bodied sour that integrates deep fruit saturation with spicy sophistication, finishing with a lingering, earthy fruitiness and a clean, refreshing tartness typical of modern American Wild Ales.

Taste. Initial impression of sharp, tart cherry and red berry; neutral malt is overshadowed by fruit; mid-palate brings tonka-derived flavors of marzipan and spice; very low bitterness; finish is dry and crisp with lingering cherry skin and a mild, earthy funk.
