This decadent Imperial Stout presents a masterful layering of dessert-inspired elements. A viscous, jet-black body delivers an initial rush of melted dark chocolate and bitter cacao, derived from its double-chocolate foundation. The addition of fresh ginger juice from Root2Ginger provides a sharp, crystallized ginger snap that cuts through the velvety sweetness of double-vanilla. A subtle infusion of ancho chilli provides a lingering, earthy depth and a gentle glow on the palate. Despite the high strength, the rich roasted malt character remains harmonious, finishing with a comforting warmth that balances the intense spice and confectionary richness.
Appearance. Jet black and opaque (40 SRM). Pours with a dense, dark tan head that shows moderate retention and leaves oily legs on the glass, indicative of its high viscosity.
Aroma. Intense and layered; powerful notes of dark chocolate and cocoa nibs dominate, supported by a distinct spicy ginger zing. Secondary aromas of sweet vanilla bean and a hint of earthy, dried pepper from the ancho chilli emerge over a background of roasted coffee and dark-roasted malts.
Taste. Rich and complex initial impression of bittersweet chocolate and fudge. The mid-palate features a bold ginger spice and a smooth, creamy vanilla sweetness that softens the roast. Hop bitterness is moderate but bolstered by cacao and roasted grain. The finish is long and warming, showing a beautiful interplay between spicy ginger, a light touch of chilli heat, and lingering chocolate.
Mouthfeel. Full to very full-bodied with a luscious, velvety, and chewy texture. Carbonation is low to moderate. A significant and comforting alcohol warmth is present, enhanced by the natural heat of ginger and ancho chilli.
