This vibrant Wild Specialty Beer showcases the profound impact of carbonic maceration on a staggering quantity of cherries, blended with a mature, two-year-old foudre ale. The extended aging period integrates a complex array of sensory cues, ranging from bright berry sherbet and zippy cranberry tartness to deeper, savory notes of raw nuts and cherry pit. Bracing acidity, reminiscent of fresh lemon juice, provides a sharp, clean lift, while the underlying wood-aged base offers a subtle, functional autolysis character. It is a zesty, multifaceted expression of fruit and time, finishing exceptionally dry and effervescent.

Appearance. Deep ruby to garnet hue (20-25 SRM) with a pink-tinted, fine-beaded head that shows moderate to low retention. Slight haze is present from the significant fruit addition and wild yeast.

Aroma. High intensity; forward aromas of tart red cherries and cranberry are backed by earthy funk, almond-like cherry pit, and a nuanced, savory bready note derived from long-term foudre conditioning.

Taste. Initial impression is sharply acidic with cherry and lemon-like zest. The mid-palate reveals complex layers of cranberry and nutty wood tannins. The finish is bone-dry and zesty, featuring a lingering fruit-skin tartness and virtually no hop bitterness.
