Cloudwater Brew Co

Inspired by Belgian farmhouse traditions, Embracing Everything is a sophisticated marriage of barrel-aged complexity and vibrant spontaneity. This Brett Beer leads with a bright, zippy bouquet where esters and wild yeast produce vivid notes of tropical pineapple, zestful orange, and stone-fruit apricot. A foundation of soft honey malt provides a delicate counterpoint to the light, juicy acidity derived from the young spontaneous component. Having rested in barrels for up to a year, the profile develops a subtle, earthy funk that seamlessly integrates with its fruity core. The result is an elegant, highly attenuated, and multifaceted ale that celebrates the evolving nature of mixed-fermentation.

Appearance. Deep gold to light amber (7-9 SRM); features a moderate, fine-beaded white head with fair retention and light lacing. Slight haze is present, consistent with a blend involving young spontaneous beer.

Aroma. High intensity; dominated by tropical pineapple and stone fruit apricot, alongside bright orange citrus esters. A soft, floral honey malt sweetness anchors the nose, while the barrel-aged components contribute a delicate, earthy Brett funk reminiscent of wet hay.

Taste. An initial impression of juicy pineapple and orange gives way to a mid-palate of soft honey malt. The finish is notably dry and crisp, driven by high attenuation, with a light, refreshing acidity that brightens the apricot notes. Hop bitterness is low, allowing the fruit and yeast character to remain the focus.

Mouthfeel. Medium-light body with a lively, moderate-to-high carbonation that enhances the zippy acidity. A subtle, well-integrated alcohol warmth is present from the 7.4% ABV, providing a smooth, creamier texture without any harsh astringency.
