A Three Sided Peach is a complex Brett Beer that showcases the elegance of twenty-one months of maturation in red wine barrels. The extended aging facilitates a sophisticated interplay between the funky, rustic Brettanomyces character and the vibrant, succulent essence of hand-harvested peaches. The red wine barrel influence introduces subtle tannins and a vinous complexity that balances the bright stone fruit profile. This pale base has transformed into a dry, multifaceted ale where whispers of oak and aged character provide a sturdy foundation for the layers of farmyard funk and stone fruit refermentation, culminating in a refined and deeply evocative sensory experience.
Appearance. Deep gold to amber (7–10 SRM) with a moderate, slightly hazy clarity from peach refermentation. It features a persistent, fine-beaded white head that leaves delicate lacing on the glass.
Aroma. High intensity with a complex profile of ripe peach skin and succulent stone fruit. A notable rustic funk provides secondary notes of wet hay and leather, complemented by a vinous red wine barrel character and soft toasted oak. Low grainy malt scent remains in the background.
Taste. The initial impression is a bright, tangy peach sweetness that quickly transitions into a dry, highly attenuated finish. Complex flavors of earthy barnyard funk and aged wood follow, with a subtle vinous acidity from the red wine barrels.
