American IPA 6.9 º 55 IBU
This American IPA is a vibrant sensory journey inspired by the subalpine meadows of Mount Rainier. The pairing of Paradisi and Citra hops creates a luxuriant aromatic bouquet of ripe mango, zesty tangerine, and tart kiwi. A delicate floral undertone, reminiscent of soft alpine flowers, balances the intense tropical fruit profile. Despite its strength, the experience remains approachable and gentle, reflecting a modern approach to the style. The malt base stays lean and supportive, allowing the New Zealand and American hop characteristics to shine with clarity and brightness, finishing with a clean, crisp bitterness that invites another sip.
Appearance. Medium gold (7 SRM) with high clarity. Forms a persistent, frothy white head that leaves significant lacing on the glass as it recedes.
Aroma. High intensity hop aroma dominated by tropical notes of mango and kiwi, complemented by bright tangerine citrus. A secondary layer of delicate, perfume-like alpine florals adds complexity. Very low, clean, grainy-sweet malt presence provides a neutral canvas, with a clean fermentation profile.
Taste. Initial impression of tropical fruit juice, specifically mango and kiwi, followed by sharp tangerine zest. Bitterness is firm but smooth, never harsh. The malt flavor is low, suggesting clean, crackery grains with no caramel character. The finish is medium-dry and clean, with a lingering hop-forward aftertaste of citrus rind and floral honey.
Mouthfeel. Medium body with a smooth, soft texture. Moderate to high carbonation provides a crisp, refreshing bite. Very light alcohol warmth is well-integrated, and there is no perceived astringency.

This beer is basically the embodiment of this area of Mount Rainier National Park from mid-July to mid-August. Oh, you’re unfamiliar? We’ll let 1889 John Muir tell you about it  – “The most luxuriant and the most extravagantly beautiful of all the alpine gardens I ever beheld in all my mountain-top wanderings.”  That’s high praise from a well traveled outdoorsman, and thus, high praise for this IPA. (Modern IPA was John Muir’s favorite style, btw). The recipe is built around a new New Zealand variety from Freestyle hops called Paradisi and paired with Citra, creating a gentle and approachable wonderland filled with natural splendor, flora & fauna, majestic views, and breathtaking notes of mango, kiwi, and tangerine with just a whisper of soft alpine flowers.
