This idiosyncratic Oatmeal Stout balances classic British tradition with a distinct coastal influence. Initial aromas of baker's chocolate and deep-roasted coffee from the heavy use of Roasted Barley are immediately met by a unique, saline minerality. The inclusion of Baywater Sweet Oyster shells and brine adds a sharp, briny edge that slices through the expected sweetness. On the palate, the roast character is dry and assertive, reminiscent of an Irish Extra Stout, yet softened by the signature silky texture of oats. It finishes with a lingering savory-meets-bittersweet complexity, where marine air meets dark cocoa.
Appearance. Opaque black (38 SRM) with a thick, creamy, persistent tan-colored head and dense lacing.
Aroma. High intensity roast with notes of baker's chocolate and roasted coffee beans. A distinctive briny, marine minerality is present, complemented by a subtle earthy hop character and low fruity esters.
Taste. Initial impression is sharply roasty and savory. Flavors of bitter chocolate and dark coffee dominate, supported by a grainy-nutty malt backbone. The oyster brine provides a noticeable saline quality that enhances the roast. Bitterness is medium and well-integrated, leading to a medium-dry finish with a lingering roasted barley and mineral aftertaste.

It’s hard to believe this beer was our 12th turn EVER. Like, our 7th beer we released. Back in December of 2015. It was OUR VERY FIRST Stout recipe! CrAzY! And the original description was 2 sentences! That’s it! This was what we said:
“We started with a Foreign-Style Stout recipe, and then added close to 20 pounds of Baywater Sweet Oyster shells & brine to the kettle. The minerality & brine play well with notes of baker’s chocolate from the roasted barley.”
HA! It appears we found our, uh, “voice” in the interim between these two batches. We also found twice as many oyster shells to add to it this time around, because it’s fun. Thank you for enjoying our whims for over 8 years, and for that, we happily bring you this esoteric deep cut.
