This collaboration between Clandestina and Camba Bavaria offers a sophisticated take on the Doppelbock, enhanced by Panamanian terroir. A deep chocolate-colored pour reveals an intense aromatic profile of rich malt, caramel, and dark fruits, punctuated by the distinct scent of Boquete coffee and Bocas cacao. On the palate, the beer is exceptionally smooth and silky, layering flavors of sweet espresso and nutty chocolate over a toasted malt backbone. Despite its 7.6% strength, the finish is remarkably dry and clean, showcasing a balanced bitterness that invites another sip while maintaining its complex, full-bodied character.
Appearance. Dark chocolate brown (SRM 22-25) with deep ruby highlights. Features a large, creamy, tan-colored head with excellent retention and persistent lacing; clarity is good despite the dark hue.
Aroma. High intensity of rich, toasted malt and Maillard products with prominent notes of freshly roasted Boquete coffee and earthy Bocas cacao. Low esters of dark fruits like plum and raisin; virtually no hop aroma with a clean lager fermentation profile.
Taste. Initial impression is very rich and malty, showcasing toasted bread and dark caramel. Flavors of sweet coffee and nutty cacao dominate the mid-palate, supported by moderate-low hop bitterness. The fermentation is clean, leading to a complex finish that is surprisingly dry for the style, with lingering notes of dark chocolate.
Mouthfeel. Full-bodied and silky-smooth with a creamy texture. Carbonation is moderate to moderately-low. Alcohol warmth is noticeable but well-integrated and gentle, with no harshness or astringency.
