SQUID KID is a striking, obsidian-hued interpretation of a traditional Gose. This experimental ale utilizes squid ink and cranberry puree to create a visually mysterious yet vibrant sensory experience. The aroma is defined by bright lactic tartness and sharp red fruit notes from the cranberry, supported by a subtle, savory brininess and a whisper of citrusy coriander. On the palate, the brisk acidity of the cranberries and Lactobacillus fermentation leads into a soft, doughy wheat backbone, culminating in a distinctive, mouthwatering saline finish. It is a complex, medium-light bodied ale where earthy mineral tones meet zesty, refreshing fruit.
Appearance. Opaque, deep midnight black (SRM 40+); produces a moderate, light pink to off-white head with tight bubbles and fair retention.
Aroma. Moderate intensity featuring sharp, acidic cranberry fruit and clean lactic sourness. Subtle coriander provides a citrusy, herbal lift, while a faint oceanic brine and low bready wheat malt linger in the background.
Taste. Initial impression is sharply tart with prominent cranberry fruit flavors. A moderate doughy malt presence is quickly overtaken by refreshing acidity and a light salt character that enhances the fruit. Very low bitterness with no hop flavor; finishes very dry and clean with a lingering mineral saltiness.
Mouthfeel. Medium-light body with a slightly round, mouthwatering quality from the salt. High carbonation provides a lively, effervescent sensation on the tongue with no perceived alcohol warmth.
