This Wild Specialty Beer is a vibrant sensory experience, blending the lush, stone-fruit sweetness of ripe peaches with the distinct floral and tropical aromatics of Habanada peppers. At 5% ABV, the profile is defined by a delicate sourness that lifts the fruit character without overwhelming the palate. The Habanada pepper contribution is uniquely aromatic rather than spicy, offering a complex melon-like perfume and tropical fruit notes that marry perfectly with the wild fermentation. The result is a refreshing and highly aromatic sour ale that balances garden-fresh brightness with a sophisticated, chef-inspired mélange of flavors and a crisp, tart finish.
Appearance. SRM 5-8; pours a hazy, glowing apricot-gold with a moderate, fine-beaded white head that dissipates fairly quickly, leaving a thin ring of lacing.
Aroma. High intensity aromatics of fresh, juicy peaches and floral Habanada peppers, which provide notes of apricot and tropical fruit without any capsaicin heat. Subtle earthy funk and a clean, lemony lactic acidity support the fruit profile.
Taste. Initial impression is a bright, tart burst of peach flesh followed by the complex, sweet-pepper flavor of the Habanadas. Malt is low and crackery, providing a neutral base. Bitterness is very low, as the profile is driven by a balanced lactic acidity. The finish is dry and refreshing with lingering notes of stone fruit and floral esters.
Mouthfeel. Medium-light body with moderate to high carbonation that provides a prickly, refreshing sensation. Very low alcohol warmth and no pepper heat; minimal astringency with a clean, crisp mouth-cleansing acidity.
