Cierzo Brewing Co. Monkey See, Monkey Do
This collaboration between Cierzo and Engorile delivers a vibrant and super-aromatic take on the American IPA. The sensory profile is defined by a potent dry-hopping of Pacific Sunrise, which explodes with bright notes of tropical fruit, zesty citrus, and stone fruit. Supporting New Zealand hops added during the hop back introduce layers of melon and lime. Despite its hazy, juicy appearance, the beer maintains a firm bitterness and a clean, supportive malt backbone. The result is a highly expressive ale where the distinctive character of the New Zealand lúpulos shines against a crisp, refreshing finish that invites another sip.
Appearance. Pours a hazy, pale gold to light amber (6-9 SRM) with a thick, creamy, white head that exhibits excellent persistence and leaves intricate lacing on the glass.
Aroma. High intensity hop aroma featuring prominent notes of tropical mango, crushed lime, and melon from the Pacific Sunrise and New Zealand hops. Low, clean, bready-grainy malt supports the hops without competition. Fermentation is clean with very low esters.
Taste. Initial impression is a surge of tropical and stone fruit flavors. Medium-high hop bitterness is well-integrated with a low, grainy-sweet malt character. The finish is dry to medium-dry, showcasing a clean, hoppy aftertaste dominated by citrus zest and tropical fruit skin. Complexity is high due to the layered hop additions.
Mouthfeel. Medium body with a smooth, soft texture. Carbonation is moderate to medium-high. No astringency is present, and there is a very light, well-integrated alcohol warmth consistent with its 6% strength.
