Dracarys is a vibrant Wild Specialty Beer that captivates with its striking appearance and complex fruit interplay. A collaboration between Cierzo and Beerhunter, this sour ale showcases the lush sweetness of sun-ripened strawberry and the exotic, mildly tropical essence of pitahaya (dragon fruit). The addition of lactose provides a velvety, medium body that softens the sharp lactic acidity, creating a harmonious balance between tartness and creamy sweetness. Aromas of fresh red berries and subtle earthy fruit notes dominate the nose, while the palate experiences a refreshing zing that finishes clean and fruity. It is a modern, approachable take on the wild ale style.

Appearance. Pours a stunning, vibrant shade of deep pinkish-red to magenta. It features a moderate, pale-pink head with fair retention and light lacing. The body is hazy to opaque due to the fruit solids and lactose.

Aroma. Moderate to high intensity. Dominant notes of fresh, sweet strawberry are immediately apparent, followed by the light, pear-like earthiness of dragon fruit. A clean lactic tartness provides a sharp backdrop, complemented by a soft, milky sweetness from the lactose. Hop character and malt aromatics are negligible.

Taste. Initial impression is a refreshing burst of tart strawberry. The dragon fruit adds a subtle, exotic depth without overpowering. Lactose lends a noticeable creamy sweetness that rounds out the mid-palate, offsetting the moderate lactic acidity. Bitterness is very low. The finish is fruity and slightly off-dry, with a lingering berry-cream sensation.

Mouthfeel. Medium body, enhanced by the unfermentable lactose to feel fuller than a typical sour. Carbonation is moderate. It possesses a smooth, creamy texture with no alcohol warmth and very low astringency.
