This Saison pours a beautiful amber with distinct orange highlights, offering a rustic visual invitation. The aromatic profile is dominated by a spicy marriage of yeast-driven clove and the bright, citrusy perfume of coriander seeds, backed by a subtle herbal undertone. On the palate, the influence of the Belgian yeast is clear, mingling with soft bready malt notes and a persistent coriander presence. The experience is highly attenuated and effervescent, typical of the style, culminating in a refreshing, lingering herbal aftertaste that balances the spiced complexity and dry finish. It is a well-crafted example of a spiced farmhouse ale.
Appearance. Deep amber with orange reflections (approximately 10-12 SRM). Topped with a dense, long-lasting ivory head that leaves persistent Belgian lace. Clarity is slightly hazy, consistent with an unfiltered farmhouse presentation.
Aroma. Moderate to high intensity featuring prominent spicy phenols reminiscent of clove and black pepper. The use of coriander seeds provides a distinct citrus and floral aroma, complemented by low earthy and herbal hop notes. A light, grainy, bready malt backbone supports the fermentation-driven complexity.
Taste. A dry, complex balance of fruity and spicy flavors. Initial impressions of coriander and clove are supported by a soft, grainy malt character. Hop bitterness is moderate but accentuated by a very high level of attenuation. The finish is remarkably dry with a lingering herbal and spicy aftertaste that remains clean and refreshing.
Mouthfeel. Medium-light body with very high, effervescent carbonation. There is a light, pleasant alcohol warmth appropriate for its 6% ABV. Smooth, with no significant astringency despite the spicy character.
