This vintage-dated 2018 French Cider presents a sophisticated yet rustic sensory profile, defined by its uncompromising Extra-Brut character. On the palate, it delivers a bone-dry experience that highlights a complex array of fermented apple skins and earthy, farmhouse nuances. The rustic cuvée intent is evident through a structured tannic backbone and subtle leather-like phenols, characteristic of traditional artisanal production. Despite its dryness, a persistent, delicate fruitiness emerges in the finish, offering a refined contrast to the initial sharp, savory depth. It is a masterful expression of terroir, balancing intensity with a crisp, refreshing effervescence that cleanses the palate effectively.
Appearance. Deep gold to light amber color; brilliant clarity with a fine, persistent effervescence that forms a thin, white mousse which dissipates quickly.
Aroma. High intensity of bittersweet apples, complemented by prominent rustic notes of leather, barnyard, and damp earth. Subtle spicy phenols and a hint of dried fruit esters emerge as the cider warms.
Taste. Initial impression is bone dry and sharp. Strong bittersweet apple flavor leads into a complex mid-palate of wood-like tannins and earthy minerals. Negligible sweetness is offset by a lingering, fruity apple-skin aftertaste and a clean, puckering finish.
