Appearance. Pale gold (SRM 4-5) with brilliant clarity. Very low to no head formation, characteristic of still or lightly sparkling ciders, with moderate effervescence visible in the glass.

Aroma. High intensity aromatics of fresh-pressed apples and floral esters. A dominant wild character follows, displaying horse blanket, leather, and earthy funk. Subtle oak-derived vanillin and a faint spicy phenol reminiscent of a Belgian farmhouse yeast are present.

Taste. Initial tart apple skin and sharp acidity from the McIntosh. The mid-palate introduces savory, rustic notes of hay and aged wood. Spartan apples provide a brief hint of fruit sweetness before being overtaken by the drying tannins of the Golden Russet. No hop bitterness is present. The finish is extremely dry and clean, leaving a lingering earthy apple character.
