This Wild Specialty Beer presents a vibrant, refreshing profile defined by the bright, tart essence of ripe raspberries. The fermentation displays a clean, lactic acidity characteristic of its wild nature, harmonizing beautifully with the herbal nuances of lemon balm. These botanical notes introduce a subtle citrus and mint-like layer that lifts the berry character without overshadowing it. A faint, cracker-like malt presence provides a delicate backbone, while the finish is crisp, dry, and exceptionally effervescent. Designed for drinkability, it balances fruit-forward esters with a refreshing sourness, making it a sophisticated yet approachable expression of local ingredients and intentional fermentation.
Appearance. Hazy pinkish-red to light ruby (5-10 SRM) with a delicate, fine-beaded white head that may show a slight pink tint. Retention is moderate to low.
Aroma. Moderate to high intensity of fresh raspberries with an underlying lemony, herbal note from the lemon balm. Clean lactic sourness is evident, with minimal hop presence and a very low, bready malt background.
Taste. Sharp initial tartness dominated by fresh raspberry flavors. The lemon balm provides a secondary herbal complexity with hints of lemon zest. Malt flavor is low, providing just enough structure. Bitterness is virtually absent, leading to a bone-dry, refreshing finish with lingering fruit esters.
Mouthfeel. Light body with high carbonation that creates a spritzy, refreshing sensation. Very low alcohol warmth and a slight, fruit-derived astringency that enhances the dry finish.
