Dark Magic presents an intriguing fusion of a dark, roasted base and a vibrant triple-berry medley. Aromas of fresh Raspberry and tart Sour Cherry dominate the foreground, supported by the deeper, earthy sweetness of Blackberry. Beneath the fruit, a subtle foundation of dark malt provides hints of toasted crust and light cocoa without overwhelming the sharp, lactic acidity. This Wild Specialty Beer balances the intense tartness of the fruit with a clean, wild fermentation profile, leading to a crisp and refreshing finish. It is a complex, medium-bodied pour that highlights the interplay between dark malt depth and bright forest fruits.
Appearance. Deep mahogany to near-opaque black (SRM 35+), exhibiting distinct ruby and violet highlights when held to the light. The head is moderate in height with a soft pinkish-tan or lilac tint, showing fair retention and leaving light lacing.
Aroma. High intensity aromatics of sharp Raspberry and tart Sour Cherry. The Blackberry provides a deeper, jammy undercurrent. A clean lactic sourness is prominent, complemented by subtle background notes of dark bread crust and a faint, earthy funk typical of wild fermentation.
Taste. Initial impression is sharply acidic and fruit-forward. Bright, tart flavors of Sour Cherry and Raspberry lead the palate, followed by the darker, slightly tannic character of Blackberry. The malt base provides a dry, toasted flavor with hints of unsweetened cocoa. Hop bitterness is negligible, as the balance is driven by lactic acidity. The finish is very dry and crisp with a lingering berry tartness.
Mouthfeel. Medium-light body with moderate to high carbonation that provides a prickly, refreshing sensation. Very low alcohol warmth. A slight tannic astringency from the berry skins adds structure and enhances the dry perception.
