La Chimay rouge fût la première bière brassée à labbaye en 1862. Pour la recette actuelle, le Père Théodore sest directement inspiré de la recette original lorsquil recréa la brasserie après la seconde guerre mondiale.Son logo « Authentic Trappist Product » certifie que la Chimay rouge est produite au sein dune Abbaye trappiste sous le contrôle de la communauté monastique et que la majorité des revenus engendrés sont destinés à lentraide sociale.
