This modern Saison balances traditional farmhouse rusticity with a bold, contemporary hop profile. Effervescent and bright, it opens with a distinct tropical fruit character driven by Styrian Fox and Styrian Wolf, offering notes of melon and ripe berries. Hallertauer Blanc lends a crisp, vinous white-grape quality, while Styrian Cardinal enhances the citrus-forward aromatics. The signature Saison yeast strain provides a foundation of cracked black pepper and light clove spiciness, which cuts through the soft, grainy malt base. The beer finishes exceptionally dry and refreshing, leaving a lingering impression of pomelo zest and herbal complexity that invites another sip.

Appearance. Pale gold to deep orange (SRM 5–8) with a persistent, dense, rocky white head that leaves significant Belgian lacing. The clarity is slightly hazy due to modern hopping techniques and its unfiltered nature.

Aroma. High aromatic intensity featuring a mix of tropical fruit, passionfruit, and white wine from the Styrian and Hallertauer hops. These are supported by moderate spicy yeast phenols (black pepper) and citrusy esters, with a low, rustic, grainy malt background.

Taste. Initial impressions of citrus and tropical fruit are followed by a medium-high hop bitterness and a very dry finish. Hop flavors of grapefruit and white grape are prominent, balanced by a peppery yeast character and a soft, grainy malt palate. The aftertaste is bitter and spicy with a clean, crisp conclusion.

Mouthfeel. Medium-light body with very high, effervescent carbonation. There is a light, well-integrated alcoholic warmth and a refreshing, crisp feel with no notable astringency.
