This complex Saison offers a masterful intersection of farmhouse tradition and viticulture. Aromatically, it presents an intense bouquet of floral Muscat grapes and white wine lees, underscored by the classic peppery phenols of a Belgian yeast strain. The twelve-month barrel aging provides a nuanced vinous structure, while the macerated Piedmontese Muscat marc contributes vibrant notes of stone fruit and crushed grape skins. On the palate, a rustic, grainy malt backbone supports a bone-dry finish with a delicate, tart acidity. Effervescent and bright, it balances its fruity complexity with a light oak presence and a clean, spicy bitterness that lingers elegantly.

Appearance. Pale gold with a slight orange hue (approx 7-9 SRM). Hazy from the lees and grape marc maceration. Dense, rocky, long-lasting white head with fine Belgian lace.

Aroma. High intensity. Dominated by perfumed Muscat grape, floral jasmine, and honeyed apricot. Complementary notes of white wine lees provide vinous depth. Spicy yeast esters resembling cracked black pepper. Light grainy malt and soft oak vanillin in the background.

Taste. Initial impression is bright and vinous. Flavors of fresh grape, peach, and citrus peel lead into a rustic, grainy malt core. High attenuation ensures a very dry finish.
