This Saison presents a vibrant interplay between rustic farmhouse character and lush, sun-ripened peaches. The aroma is dominated by stone fruit and citrus esters, complemented by a signature peppery phenolic spice. On the palate, the peach contribution provides a succulent depth that balances the grainy, cracker-like malt profile. Despite the fruit addition, the finish remains remarkably dry and effervescent, a hallmark of the style. At 7.4% ABV, it carries a sophisticated warmth that elevates the earthy, floral hop notes and emphasizes the crisp, bitter aftertaste typical of a strong Belgian ale.

Appearance. Deep gold to pale orange with a slight haze from the peach addition and lack of filtration. Topped by a dense, rocky, ivory head that exhibits excellent retention and leaves significant Belgian lacing.

Aroma. High intensity with a bouquet of fresh peaches and apricot, layered over citrusy esters and a moderate spicy phenol reminiscent of cracked white pepper. Low earthy hop notes and a subtle, grainy malt backbone support the yeast-driven aromatics.

Taste. Initial peach sweetness quickly transitions into a complex profile of orange zest and spicy yeast. Medium-high bitterness is amplified by a very high attenuation, resulting in a bone-dry finish. Grainy malt flavors persist into the aftertaste, accompanied by a lingering peppery spice.
