This elevated Saison presents a vibrant marriage of farmhouse rusticism and refined oenological influence. Infused with Gamay and Pinot Noir grapes from Geneva, the sensory profile is dominated by bright, carbonic maceration-driven notes of raspberry, cherry, and subtle floral nuances. The high attenuation characteristic of the style ensures a bone-dry finish, allowing the spicy black pepper phenols and earthy hops to cut through the rich, vinous fruit character. At 8% ABV, a gentle warmth supports the complex layers of red fruit and toasted grain, while the extended maceration contributes a delicate structural tannin, resulting in a sophisticated, effervescent, and deeply fruity experience.
Appearance. Deep ruby to garnet with a slight violet hue; moderate haze from the grape inclusion and yeast. Features a dense, pink-tinted ivory head with excellent retention and delicate lacing.
Aroma. High intensity with a complex bouquet of red berries—specifically raspberry and red currant—intermingled with spicy, peppery phenols. Low earthy and floral hop notes provide a base for the vinous, slightly jammy character of the grapes.
Taste. An initial burst of tart red fruit and cherry leads into a mid-palate of soft, grainy malt and spicy yeast character. The finish is remarkably dry and crisp, with a lingering moderate bitterness and subtle tannic grip that balances the fruit-forward profile.
Mouthfeel. Medium-bodied with very high, effervescent carbonation that provides a prickly sensation. A noticeable but well-integrated alcohol warmth is present, accompanied by a slight, pleasant astringency from the grape skins.
