The sensory profile is defined by a bright, vinous character, leading with the distinctive red berry notes of strawberry and raspberry inherent to Gamay. Spontaneous fermentation introduces a layer of rustic complexity, contributing subtle earthy and leathery undertones. The experience is sharply acidic and bone-dry, featuring a firm tannic structure derived from both the grape skins and high-tannin apple varieties. This sparkling hybrid blurs the line between heritage cider and natural wine, offering a clean, refreshing, and deeply aromatic finish.

Appearance. Brilliant clarity with a vibrant, pale ruby to deep rose hue. Effervescent with no head retention or lacing, typical of the cider style.

Aroma. High intensity aromatics lead with fresh-pressed apple skin and a distinct vinous quality. Pronounced red fruit esters of raspberry, red cherry, and strawberry from the Gamay grapes merge with subtle funky, earthy, and leathery notes from spontaneous fermentation. No hop aroma is present.

Taste. The initial impression is bone-dry and refreshingly acidic. Crisp apple tartness is immediately joined by the flavors of underripe red berries and grape must. The spontaneous fermentation provides a complex, slightly wild earthiness. There is no hop bitterness. The finish is very dry and lingering with a pleasant, light tannic astringency from the Gamay skins and high-stem apple varieties.

Mouthfeel. Medium-light body with high carbonation providing a lively, prickly sensation. Noticeable alcohol warmth is well-integrated, adding a wine-like weight. Moderate tannic grip provides structure and a clean, puckering sensation.
