The spontaneous fermentation defines its sensory profile, weaving a vibrant tapestry of bruised apple, damp hay, and earthy barnyard funk. On the palate, it is assertively bone-dry and bright, characterized by sharp malic acidity and a delicate tannic structure derived from heirloom fruit skins. The effervescence is lively, lifting notes of flinty minerality and leather. It finishes with a clean, puckering dryness that emphasizes the purity of the Thurgau apples and the wild, uninhibited character of its fermentation.
Appearance. Pale straw to deep gold. Brilliant clarity with a vigorous, sparkling effervescence. A thin white head forms briefly before dissipating into a light collar, leaving no lacing.
Aroma. High intensity of ripe and bruised apple skins. Pronounced secondary characteristics from spontaneous fermentation, including hay, horse blanket, and a light leathery funk. Subtle floral notes and a touch of citrus-like acidity are present, with no malt or hop character.
Taste. Bone-dry initial impression with high, crisp acidity. The flavor is dominated by tart green apples and wild yeast phenolics (earthy, spicy). Moderate tannins provide a structural bitterness and a slightly grippy sensation. The finish is very dry and clean, with a lingering aftertaste of apple pomace and stony minerality.
