Chien Bleu Aria is an elegant and complex Saison that masterfully weaves floral and vinous elements into a rustic tapestry. The inclusion of Moscato pomace and Alsatian Riesling provides a sophisticated fruit profile of white grape, apricot, and lychee, while the elderflower components impart a delicate, perfumed headiness. It presents a high aromatic intensity where spicy yeast phenols of black pepper meet the floral elegance of the botanicals. On the palate, it is remarkably dry and effervescent, showcasing a lean, grainy malt base that allows the floral and grape-skin notes to shine before concluding with a crisp, mineral-edged finish and a persistent, refreshing bitterness.
Appearance. Pale gold with a slight orange hue (approx. 7 SRM). The beer displays a soft, persistent haze from the pomace addition, topped by a dense, rocky, white head with excellent retention and intricate Belgian lace.
Aroma. High intensity. A complex bouquet of perfumy elderflower and white grapes dominates. Complementing these are moderate spicy yeast esters of black pepper and subtle citrus pome fruit. Low grainy malt provides a neutral foundation for the heavy floral and vinous aromatics.
Taste. Initial flavors of white peach, grape skin, and elderflower transition into a soft, grainy malt mid-palate. Hop bitterness is moderate but firm, accentuating the spicy, peppery yeast character. Very high attenuation leads to an extremely dry finish with a lingering floral and mineral aftertaste.
Mouthfeel. Medium-light body with very high, effervescent carbonation. There is a subtle, well-integrated alcohol warmth. A slight, pleasant grape-skin astringency adds structure and enhances the dry sensation.
