Chien Bleu

Aria is a refined expression of the Saison style, harmonizing traditional farmhouse character with elegant botanical and vinous influences. It opens with an enchanting perfume of elderflower, layered over the honeyed floral notes of Moscato and the crisp, green apple acidity of Riesling. The palate follows with a rustic, grainy malt foundation that supports vibrant esters of stone fruit and a crackle of black pepper from the Belgian yeast. Effervescent and impeccably dry, the blend offers a complex interplay between floral sweetness and vinous structure, finishing with a delicate, lingering bitterness and a touch of white grape skin.

Appearance. Pale gold (approximately 6 SRM) with a slight, hazy luminescence. Supports a long-lasting, dense, rocky white head that leaves significant Belgian lace on the glass as it recedes.

Aroma. High intensity with a complex bouquet of fresh elderflower and floral Moscato grapes. Prominent spicy Belgian yeast esters provide notes of black pepper and pome fruit, complemented by the zesty citrus and mineral-driven crispness of Riesling. Malt character is low and lightly grainy.

Taste. Initial impression is bone-dry and effervescent. Dominant flavors of white peach, green grapes, and elderflower are balanced by a moderate hop bitterness and a rustic, grainy malt palate. Fermentation character is spicy and peppery, leading to a very dry, clean finish with a lingering vinous aftertaste.

Mouthfeel. Medium-light body with very high carbonation that feels prickly and effervescent. Features a light, well-integrated alcohol warmth and a crisp, refreshing finish with no perceived astringency.
