This Alternative Grain Beer, brewed in the style of a Rye IPA, showcases a complex interplay between spicy cereal notes and expressive modern hops. The addition of rye provides a light toast and caramel-forward malt backbone with a distinctive peppery spice. Amarillo hops lead the sensory charge with aromas of sweet oranges, while Talus adds intricate layers of pink grapefruit, citrus rinds, dried roses, and sticky pine resin. The experience is defined by the balance between the increased body of the alternative grains and a firm hop bitterness, resulting in a clean, resinous, and moderately dry finish.
Appearance. Medium amber to deep copper (12–16 SRM) with a persistent, creamy off-white head and excellent lacing. Slight haze may be present due to the high protein content of the rye and dry-hopping.
Aroma. Moderate to high intensity hop aroma featuring sweet oranges, grapefruit pith, and a floral quality reminiscent of dried roses. Beneath the hops, a toasted, bready malt character exists with light caramel and a clear, spicy, peppery note from the rye.
Taste. Initial flavors of orange and citrus rind transition into a bready, toasted malt mid-palate. The rye contribution is unmistakable, offering a spicy, grainy complexity that enhances the moderate-high bitterness. The finish is dry and lingering, with pine resin and grapefruit flavors persisting.
Mouthfeel. Medium body with a characteristic oily or slightly slick texture derived from the rye grains. Moderate carbonation with no significant alcohol warmth, finishing smooth without harsh astringency.
