Chapter Brewing Laughing With Friends

This Imperial Stout, aged for eighteen months, presents a masterclass in maturity and depth. The extended conditioning yields a sophisticated profile where deep chocolate and rich dried fruit notes like figs and raisins take center stage. Hints of smooth treacle provide a foundational sweetness, while a subtle, savory touch of umami adds an unexpected layer of complexity to the roast. Despite its robust strength, the alcohol is seamlessly integrated, contributing a gentle warmth that complements the velvety texture. It is a harmonious and soulful example of a matured Imperial Stout, balancing intense roasted grains with an elegant, vinous character that lingers long on the palate.
Appearance. Jet black and opaque in the glass. It supports a well-formed, dense, dark tan head with moderate retention. Noticeable viscosity is evident through thick legs that cling to the glass when swirled.
Aroma. High intensity with a rich blend of bittersweet chocolate and cocoa roast. Strong esters present as dark fruits, specifically plums and raisins, alongside a smooth treacle sweetness. A subtle savory umami note and a vinous, port-like quality emerge from its long aging, with very low earthy hop presence and a well-integrated alcohol warmth.
Taste. Intense and complex, featuring layers of dark chocolate, toasted malt, and deep molasses-like treacle. The fruit character is pronounced, reminiscent of dried figs and black currants. A firm hop bitterness and roasted grain character provide balance, leading to a long, bittersweet finish. A unique, savory umami depth adds complexity, while the 18-month aging has smoothed any harsh edges into a harmonious, warming aftertaste.
Mouthfeel. Full-bodied and chewy with a velvety, luscious, and coating texture. Carbonation is low to moderate. A gentle, smooth alcohol warmth is present and well-integrated, lacking any sharp or solventy heat.

We then stuck some away to see how it would develop – and here is the result.
