Chapter Brewing Keystone
Keystone is a robust West Coast IPA that showcases a resinous and multifaceted hop profile. A potent blend of Simcoe and Columbus provides a foundational layer of sticky pine, dank earth, and pungent resin. Layered over this is a bright, citrusy punch of grapefruit and lime from Centennial and Citra, which also contributes nuances of tropical passionfruit. The 7.3% ABV is expertly integrated, offering a smooth warmth that carries the assertive bitterness through to a crisp, bone-dry finish. This unfiltered American IPA balances its aggressive hopping with a clean, lean malt backbone that never distracts from the hop intensity.
Appearance. Deep gold to light amber in color (8-10 SRM). Displays a slight haze due to being unfiltered, topped with a persistent, off-white, creamy head that leaves significant lacing on the glass.
Aroma. High-intensity hop aroma featuring dominant notes of pine resin, damp earth, and pungent citrus. Simcoe and Simcoe-derived dankness are prominent, complemented by Centennial's floral grapefruit and Citra's tropical mango and lime. Very low, clean, grainy-sweet malt presence with a neutral fermentation profile.
Taste. Initial hop-forward impact of resinous pine and grapefruit peel, followed by a firm, assertive bitterness. Mid-palette reveals light toasted cracker and grainy malt flavors that support the hops without adding sweetness. Simcoe and Columbus provide an earthy, spicy depth, while Citra adds a bright tropical edge. The finish is dry and crisp with a long-lingering, clean bitterness and a hint of smooth alcohol.
Mouthfeel. Medium-bodied with a smooth, slightly oily texture from hop resins. Medium-high carbonation provides a crisp bite. A light, pleasant alcohol warmth is present, commensurate with its 7.3% ABV, without any harshness or astringency.
