Appearance. Deep gold to amber. Brilliant clarity. Pours with a thick, frothy white mousse that persists well due to high bottle conditioning pressure.
Aroma. High intensity. Rich, bittersweet apple aroma featuring ripe Dabinett character, complemented by distinct smoky oak and light vanilla. Subtle spicy phenols and earthy, farmhouse esters add complexity. No hop aroma.
Taste. Initial impression of tart culinary apples followed by a deep, savory bittersweet apple mid-palate. Moderate to high tannins provide a chewy texture. Firm acidity balances the dry finish. Lingering notes of wood smoke and dried fruit. Tannin bitterness is moderate and well-integrated.

How to serve: lightly chilled
The aroma: a combination of green apples, smoky barrels and lemon balm. Citrus vodka as it warms in the glass.
The taste: the lemon-like acidity of the culinary and dessert fruit jostles for domination alongside the spiced orange of the dabinett; the former just pipping it for us. Malolactic character has started to develop some vanilla creaminess, whilst the apples taste green and crisp. The finish is bone dry and the chewy tannins coat the sides of the mouth with astringency. There’s a savoury, salty character to it. 750ml. 7.5%
